Low carb casseroles that have been made ahead and stored in the freezer can be a boon on those soccer practice/dance class evenings when there is no time to cook. There are dozens of web sites with hundreds of recipes for low carbs casseroles on the net as well as in cookbooks and magazines dedicated to low carb dieters. Some of the casseroles found were low carb mac and cheese, mock lasagna, low carb lasagna with thinly sliced eggplant instead of pasta, and lower carb chicken and cauliflower casserole. In this recipe the cauliflower is shredded and is used in place of white rice.

Casseroles can be low carb main dishes, sides or desserts. You can have casseroles for breakfast, lunch or dinner. If you have a favorite casserole from your pre-low carb days there is almost certainly a lower carbohydrate version, you just have to hunt it down. Also once you are comfortable with counting carbs why not try adapting your favorite casserole recipe yourself.

Be sure to label them. Except for your 6 year old who wants mac and cheese two nights in a row? Going to a church pot luck dinner? Defrost one of your lower carb casseroles and you are set to go. A neighbor is ill, bring the family a chicken and cauliflower casserole. How about a mac and cheese one for the family that just moved in next door? If you don’t mention it, no one will ever know that your gifts are low carb.
